Candied Sweet Potatoes

This was one of my favorite sides my mom would make for Thanksgiving — Candied Sweet Potatoes. It’s so simple yet always a hit, perfectly sweet and so tender. They’re great to be made ahead and can also be made paleo as well I’ve included the swaps below. I hope you get to enjoy these with your family this year!

Ingredients: (serves 10-12)

  • 8 large sweet potatoes

  • 1 cup brown sugar or coconut palm sugar

  • 1/2 cup butter or ghee

Steps:

  1. Bring a large stock pot of water to a boil along with the sweet potatoes until you can stick a fork in them — about 20 minutes. Once finished, let cool then peel and cut in half long ways.

  2. On a flat cook top, turn on low heat and melt butter then add the sliced sweet potatoes. Once cooking sprinkle brown sugar over the top and continue cooking on low. When you’re about 20 minutes from serving — turn up the heat to medium-high and to caramelize the brown sugar.
