Crispy Chili Oil Fried Egg Toast

Sourdough toast topped with avocado and a fried egg cooked in homemade crispy chili oil

For the crispy chili oil, add the following to a small pot: 1 large shallot quartered, 6 crushed garlic cloves, 2 tablespoons sichuan peppercorns, 2 dried bay leaves, 2 whole cinnamon sticks + 2 cups avocado oil (or another neutral high heat oil) then bring to a low simmer and remove from the heat after about 30 minutes or until fragrant (make sure it doesn’t brown)

Remove from the heat, then add 1 cup sichuan chili flakes, 1.5 tsp Chinese five-spice + 1.5 tsp salt to a bowl straining the oil over the chili flakes (use immediately or store in an airtight container up to 6 months)

Fried egg: cook in the chili oil along with some of the crispy chili flakes

Toast sourdough with olive oil then rub a garlic clove on it, top with sliced avocado, chili oil fried egg, scallions + dill

This is packed with so much flavor and super spicy too! If you want to dial back how spicy it is — add less chili flakes (1/2 cup chili flakes less spicy, 1/4 cup even less)
