The Best Cobb Salad

Easily one of our favorite salads to make — The Cobb Salad. We’ve made several iterations with different variations, however one thing that’s always consistent is the dressing. Hope you enjoy!

Ingredients (serves 6):

• 6 artisan romaine lettuce (chopped)

• 1 can garbanzo beans

• 4 hard boiled eggs

• 1 large sweet potato (cubed) with avocado oil + seasoning,

• 3/4 cup heirloom cherry tomatoes (quartered)

• 1 avocado (cubed)

• 1/2 cup sliced peperoncini

• 3 chicken breasts or 1/2 rotisserie chicken (shredded)

• salt + pepper

Add all ingredients to a bowl, can be made beforehand and covered with a snacksheet in the fridge once ready to serve — add dressing and mix to combine.

Dressing:

• 1/2 cup olive oil

• 1/4 cup red wine vinegar

• 2 tablespoons avocado oil
• 2 teaspoons dijon mustard

• 2 teaspoons pure maple syrup

• salt + pepper to taste
