How To Make a Breakfast Quesadilla
Happy Cinco de Mayo! Sharing my breakfast quesadilla that I made on my instagram - it’s such a great way to mix up breakfast or make for a snack during the day! Its filled with avocado, eggs, cheese, bacon and hot sauce, you can adjust the ingredients as you’d like which makes them so versatile!
Ingredients:
1 large coconut tortilla or 2 regular size tortillas
1/4 avocado
Ghee or avocado oil
1/2 diced bacon
Cheese
Directions:
Crack eggs into a bowl and mix until smooth then add in the spicy seasoning
Add oil to the pan and once you can feel the heat coming off the pan add the eggs
When you start to see the eggs starting to set around the edges, place the tortilla over the eggs and flip
Add the avocado, cheese, bacon and hot sauce then fold the tortilla in half
Cook for 2 minutes per side or until the cheese is melted
Remove from heat, cut into bite sized pieces and enjoy!
