Grilled Halloumi Sandwich

A simple, yet delicious veggie sandwich - hope you enjoy!

Ingredients: (2 servings)

  • 4 slices sourdough

  • 2 Heirloom Tomatoes

  • Garlic Pepper Mayonaise

  • Halloumi

  • Arugula

  • Greek Vinaigrette

  • Red Onion

  • Lemon

  • Olive Oil

Instructions:

  1. Grill the halloumi with oilive oil and lemon juice.

  2. Toast sourdough bread. (I like to put in a cast iron skillet toasting just the outside so that the inside is still soft yet crispy on the outside.

  3. Garlic pepper mayo - quick version add mayo, garlic powder, black pepper and juice of a lemon. From scratch, egg yolk, avocado oil, juice of a lemon, garlic powder, salt, cracked black pepper using an immersion blender.

  4. Slice heirloom tomatoes, dress arugula with a greek vinaigrette and slice red onion.

  5. Assemble with garlic pepper mayo on sourdough then add heirloom tomatoes with salt and pepper, grilled halloumi, arugula, red onion plus lemon juice and top with another slice of sourdough with more garlic pepper mayo.
